2 cups unbleached all-purpose flour, plus more for dusting
1 cup butter, softened
1 cup white sugar
1 egg
2 2⁄3 cups flour
1⁄4 teaspoon salt
½ Cup Chopped mint

In a large bowl, cream together the butter and white sugar until light and fluffy.
Beat in the egg, then stir in the mint extract.
Combine the flour and salt, mint; stir into the sugar mixture.
Roll into a log, wrap in plastic wrap and refrigerate for 1 hour.
Slice into biscuits and bake at 220 C for 9 min
